This recipe is an all-around favourite called Kofta / Kefte.

Preparation
Step 1
Mix the meat.
Step 2
Break the eggs in a bowl and add all the herbs and spices. Add that to the meat.
Step 3
In a large cup pour the yogurt and add baking soda. The yogurt will start to rise when it’s done add to the meat.
Step 4
Finally, add onion and garlic and bread crumbs.
Step 5
Start mixing the mixture by hand and slowly add water handful at a time, the water will make the kofta moist. If the mixture is too wet you can adjust by adding more breadcrumbs .
Step 6
Prepare balls and roll them in flour.
Step 7
Heat up sunflower oil and fry all of them by leaving space in between in the frying pan.
Serve
Serve with shopska salad and mash potatoes.

One half (0.5) lb ground pork
One halfl (0.5) lb ground beef
One (1) large onion
One (1) tbsp chopped garlic
Salt and pepper to taste
Two (2) eggs
One (1) cup bread crumbs (add more if needed)
One (1) cup of plain Bulgarian yogurt or just plain yogurt (do not use Greek yogurt, because it’s drained and too thick)
One (1) tsp baking soda
Two (2) cups of chopped parsley
One (1) tbsp cumin
Two (2) tbsp of savory
